Pear Armagnac

Pear Armagnac
1/2 ounce armagnac
1/2 ounce chilled pear cider
1/2 ounce pear sorbet
2 drops walnut oil
chopped, toasted walnuts, for garnish.
Stir in a mixing glass, without ice, and pour into a chilled grappa glass. Add the garnish.
Adapted from a recipe by Ratha Chau and Yvan Lemoine, Fleur de Sel, New York. Created for an armagnac cocktail competition, 2003.
