101 Best New Cocktails

Saluting Balance & Harmony
in Cocktail Glasses Worldwide

This cocktail recipe has been chosen as one of the 101 Best New Cocktails, and it will be immortalized in gaz regan's Annual Manual for Bartenders: 2011.

Tessmanian Devil

Adapted from a recipe by Tess Posthumus, Door 74,  Amsterdam, the Netherlands.

“Be careful with the Tabasco and cayenne pepper. Don’t make it too spicy, just give it a little spicy aftertaste.” Tess Posthumus.

20 ml (.66 oz) Beefeater gin

20 ml (.66 oz) Strega

20 ml (.66 oz) Lillet Blanc

20 ml (.66 oz) fresh lemon juice

1 dash Tabasco

1 dash cayenne pepper

1 dash Bitter Truth Creole bitters

1 piece red chili pepper, as garnish

Shake over ice and fine-strain into a chilled cocktail glass. Add the garnish.

gaz sez:  Tess is right about having to be very careful with the Tabasco and cayenne in the Tessmanian Devil, but if you pull it off and balance this baby well, you’ll be making this drink over and over again, I think.  Door 74 was the last stop on a very long bar crawl, courtesy the good folk at Bols, in 2010.  Hope I didn’t misbehave too very badly . . .
